Tem também orientação de como escolher os ingredientes e levá-los ao fogão. As aulas incluem ainda dicas de como manipular os alimentos, organizar a geladeira, a despensa, a lista de compras e reaproveitar ingredientes.&lt;br /&gt;O serviço pode ser ensinado para a dona da casa, a empregada, homens. Para iniciantes ou veteranos na cozinha.&lt;br /&gt;E outra ideia, que vem partindo do personal chef, é o vale - presente. O texto lembra o já tradicional Almoço das Princesas, reunião entre amigas e aspirantes a jornalistas de Brasília, todas da mesma turma na universidade.&lt;br /&gt;A expressão Almoço das Princesas remete ao período em que as meninas fizeram personagens de princesas em uma radionovela de época, para um trabalho da faculdade. Desde então, Polianna Furtado, Andréa Macedo, Aline Santiago, Patrícia Baptista, Rejane Evaristo e Nancyelle de Oliveira se reúnem com frequência, sem obrigação, de forma espontânea, quando bate aquela vontade (ao mesmo tempo!) de se encontrarem.&lt;br /&gt;O que explica a invenção do Almoço é a ideia de que &lt;strong&gt;ser feliz é simples&lt;/strong&gt;. Então, na correria do cotidiano, em um dia de semana qualquer, se encontram para jogar conversa fora, aquele papo de mulherzinha e saborear uma boa comida.&lt;br /&gt;A escolha da data para o Almoço é aleatória também, ao acaso.&lt;br /&gt;Uma das meninas se anima e contagia as outras. Aí pronto. Cada uma se oferece para levar o que for preciso, após a definição do cardápio.&lt;br /&gt;Rejane, a chef, prepara massas e panquecas, já que a maioria das meninas tem predileção por pratos italianos e franceses. O que muda são as combinações de ingredientes, a partir da criatividade da chef e dos pitacos das amigas. Na verdade, a chef não é profissional, nem pretende, mas cozinha muitíssimo bem, e tem um declarado prazer pela gastronomia. Acabou ficando com o cargo.&lt;br /&gt;Para a sobremesa, iguarias de chocolate, como mousse.&lt;br /&gt;O Almoço é regado a muuuuuuuuuuuuuuita conversa, risada e música; Jack Johnson; &lt;em&gt;Better Together&lt;/em&gt;, &lt;em&gt;Hope&lt;/em&gt;, &lt;em&gt;Angel&lt;/em&gt;... Ou um som mais agitado, como a música gostosa da baiana Ivete... Desde o momento da preparação do prato, quando todas acompanham, algumas inclusive botam a mão na massa, até o momento em que se despedem.&lt;br /&gt;O Almoço, desde quando surgiu, acontece nas quadras antigas da Asa Norte, na casa da Patrícia ou da Nancyelle, bairro em que fica o UniCeub, onde as meninas estudam. Mas elas têm planos de fazer o Almoço também em Formosa, Taguatinga, Planaltina, onde outra parte do grupo mora.&lt;br /&gt;Como mulher vez ou outra inventa uma dieta, a turma planeja a degustação de pratos mais lights, como saladas, acompanhadas de frango grelhado. E de sobremesa, gelatina e frutas cortadas e servidas em espetinhos; uva atrás de morango, seguida de manga, terminando com banana.&lt;br /&gt;O Almoço das Princesas, assim como cada prato servido, é delicioso.&lt;br /&gt;Há quem diga que mulheres, quando são amigas ficam insuportáveis, porque concordam sempre uma com a outra e não se desgrudam. A vida nos apresenta milhares de pessoas e cada uma delas vem cumprir seu papel. Todas ficam na memória, em nossos hábitos, nos nossos guardados, nas fotos... Nesta aí, as princesas reunidas. bourguignon:&lt;/strong&gt; ensopado de carne de boi em vinho tinto. Originalmente, a receita é feita com vinho da Borgonha, região francesa onde foi criada.&lt;br /&gt;&lt;strong&gt;&lt;br /&gt;Carré:&lt;/strong&gt; o mesmo que costela ou lombo - os mais comuns são os de cordeiro, porco e vitela.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Cassoulet:&lt;/strong&gt; prato tradicional do sudoeste da França, preparado com feijão branco e combinações de embutidos e carnes de pato, porco, cordeiro, carneiro e ganso. &lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Chateaubriand:&lt;/strong&gt; bife alto de filé. Pode ser preparado com molho de pimenta verde (poivre vert) e servido com batatas salteadas. Tradicionalmente, o molho que acompanha o filé têm o mesmo nome: leva caldo de carne, manteiga, cebolinha, vinho branco e ervas.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Foie gras:&lt;/strong&gt; fígado gordo de ganso. Magret (de canard ou d'oie): peito (de pato ou de ganso) engordado. Vem com a pele e a capa de gordura. Em geral é preparado fatiado. &lt;br /&gt;&lt;strong&gt;&lt;br /&gt;Quiche:&lt;/strong&gt; torta salgada tradicional da Lorraine, feita com cubinhos de toucinho, ovos batidos e creme. &lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ratatouille:&lt;/strong&gt; preparação feita com berinjela, alho, abobrinha, cebolas, tomates e pimentões picados, grelhados e depois cozidos e temperados em azeite de oliva. Retire da panela e reserve;&lt;br /&gt;Na gordura que sobrou na panela, frite a linguiça, retire e reserve;&lt;br /&gt;Tempere o lombo com sal e pimenta e frite ainda na mesma gordura da panela (se necessário, acrescente um pouco de óleo). Retire e reserve. Faça o mesmo com as coxas de pato ou frango e com a carne de cordeiro;&lt;br /&gt;Acrescente a cenoura e a cebola picadas, o salsão, o alho poró e os 3 dentes de alho restantes à panela, e deixe dourar um pouco. No cardápio; um prato com o nome de Morte e Vida Severina, no subsolo; shows de grupos de samba, blues, rock... O jantar; à luz de velas...&lt;br /&gt;Juliana Monteiro, que é sócia-proprietária (mas anda com o crachá de “livreira”) fala dessa mistura de arte e gastronomia.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Dizem que Rayuela é uma mocinha de várias facetas. O que você acha?&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;Acho muito bacana nosso cliente ter essa percepção, já que, desde o início, temos a proposta de ser um espaço de convivência. E, não poderíamos nos deter em apenas um segmento de atuação como o restaurante, por exemplo. Mesmo antes da inauguração, nós já pretendíamos que a Rayuela fosse uma casa que recebesse o executivo engravatado para o happy hour tão bem quanto o estudante com poucos recursos ou a moça solitária em sua leitura. Um espaço versátil e democrático.&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-family:georgia;"&gt;&lt;em&gt;Como surgiu a ideia de fazer uma mistura de centro cultural, café, bar, livraria e restaurante? Houve alguma inspiração?&lt;br /&gt;&lt;/em&gt;&lt;br /&gt;Nós fizemos o espaço que gostaríamos de frequentar. A afinidade dos sócios com as artes e a minha afinidade particular com a literatura guiou nosso projeto. Tudo começou com a livraria e com nossa intenção de oferecer um espaço que propiciasse o debate acerca das artes. Um espaço onde o cliente-amigo poderia frequentar ainda que desacompanhado, já que sempre irá encontrar um motivo para nos visitar, seja um show, uma exposição, um artesanato, um livro. Claro que nos inspiramos em outros lugares, fora de Brasília e do Brasil. Eu e os outros sócios viajamos muito e antes de abrir a Rayuela, passamos uma temporada morando na Europa, onde espaços assim são mais comuns. São esses pedacinhos de lugares tão diferentes quanto Londres, Equador, Laos ou Paris que formam os retalhos que inspiram nossa casa.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;E o cardápio, com nomes que remetem à literatura, foi ideia do chef ou é uma identificação com o espaço bistrô?&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;Devido à minha paixão pelos livros, não poderia ter outra inspiração que não eles para nomear nossos pratos.&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-family:georgia;"&gt;&lt;em&gt;De acordo com a Veja Brasília, Rayuela é o melhor lugar para ir a dois. Ela, junto com a chef (e prima) Mayra Abbondanza criou a Dedo de Moça, empresa que oferece profissionalização do serviço de cozinha doméstico. Personal chef, que tal?&lt;br /&gt;&lt;br /&gt;&lt;em&gt;O que vocês querem dizer com profissionalizar o serviço da cozinha doméstica?&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;Geralmente, as cozinheiras domésticas aprendem a cozinhar por necessidade e a prática lhes dá experiência. Entretanto, não conhecem as técnicas da cozinha clássica e também não tiveram aprendizado sobre segurança alimentar, higiene e manipulação de ingredientes. Nosso trabalho tem como objetivo capacitar essa funcionária para que ela tenha autonomia de decidir cardápios, elaborar listas de compras, organizar a cozinha e atender os anseios culinários de seus patrões.&lt;br /&gt;&lt;em&gt;&lt;br /&gt;A intenção é levar a alta gastronomia para a cozinha doméstica?&lt;br /&gt;&lt;/em&gt;&lt;br /&gt;A intenção é ensinar uma comida de qualidade, seja ela trivial ou sofisticada. Como nosso trabalho é personalizado, podemos atender a diferentes necessidades, alguns clientes buscam uma comida simples, caseira e bem feita e outros querem alta gastronomia.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Como é que surgiu a ideia?&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;Nossas amigas sempre nos pediam ajuda com suas cozinheiras. Percebendo que as mulheres da nossa geração não têm tempo ou interesse em cozinhar, concluímos que existia um mercado a ser explorado. As pessoas querem comer bem em casa e isso é totalmente possível desde que se tenha uma funcionária bem treinada.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;E vocês percebem mudanças na rotina dos clientes depois do trabalho, fazem acompanhamento?&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;A mudança é muito clara! Os clientes ficam muito satisfeitos com o resultado do trabalho e os principais benefícios que percebemos é que eles economizam com supermercado (planejamento evita desperdício), comem mais frequentemente em casa, recebem mais os amigos e descobrem que podem ter uma rotina alimentar saudável e saborosa.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Esse trabalho não as afasta da gastronomia tradicional?&lt;br /&gt;&lt;/em&gt;&lt;br /&gt;De maneira alguma, a maioria dos clientes pede pratos clássicos e tradicionais.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Homens também procuram o serviço?&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;Muito! Temos clientes solteiros, divorciados, casados... Os homens se interessam demais por gastronomia e na maioria das vezes são mais exigentes que as mulheres.Também temos os serviços de aulas em grupos ou aulas-jantares, e na maioria das vezes são eles quem procuram.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Há a opção de oferecer como presente o serviço da Dedo de Moça, essa ideia pegou?&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;É uma ideia super recente, mas que está dando muito certo! Mabel Velloso, a terceira da prole de dona Canô, teve a ideia de reunir, em um caderninho, as receitas da matriarca e distribuir para a família. Mas aí a história correu a boca miúda na Bahia... Um fala daqui, outro fala dali... Pronto, o tal caderninho de receitas virou livro!&lt;br /&gt;&lt;em&gt;O Sal é um Dom&lt;/em&gt;, 100 receitas do Recôncavo Baiano, que trazem o saber e o sabor da cozinha da mãe de Caetano Veloso e Maria Bethânia.&lt;br /&gt;O livro é recheado de pratos salgados, doces, biscoitos, fotos e costumes da família, como superstições, o modo de dona Canô servir os pratos, ensinar boas maneiras aos filhos.&lt;br /&gt;E que negócio é esse de que &lt;em&gt;O Sal é um Dom&lt;/em&gt;???&lt;br /&gt;Então, um dos Velloso, o Roberto, foi morar em São Paulo. Vira e mexe telefonava para a mãe, querendo saber das receitas. Numa dessas vezes, anotou todos os ingredientes e a quantidade. Aí quis saber o tanto de sal.
